Paleo S’mores

Ham Porter: Hey, Smalls, you wanna s’more?

Smalls: Some more of what?

Ham Porter: No, do you wanna s’more?

Smalls: I haven’t had anything yet, so how can I have some more of nothing?

Ham Porter: You’re killing me Smalls! These are s’more’s stuff! Ok, pay attention. First you take the graham, you stick the chocolate on the graham. Then you roast the ‘mallow. When the ‘mallows flaming… you stick it on the chocolate. Then cover with the other end. Then you scarf. Kind of messy, but good! Try some!

Ha!  Anytime I hear the word s’mores I think of The Sandlot and this scene.

Following on the coattails of my camping post, I thought I’d follow it up with the actual construction of the Paleo S’more.  Cuz you know, caveman totally ate s’mores back then.  They had the means to make marshmallows, graham crackers, and chocolate, right?  Yeah, I know it’s a bit of a stretch BUT if you find yourself in my shoes and want to have a better option, this is what you make.

It’s a compilation of recipes so bear with me.  The grahams are from Elana’s Pantry, who has fabulous gluten-free, dairy-free, grain-free recipes all over her site, and the marshmallows are from The Urban Poser, who happens to live in Dallas!  Squeal!  I wonder if I’d be star struck if I happen to run into her….maybe at HG Sply Co. while noshing on one of their bowls consisting of grass-fed meats and local veggies.  Nah, I don’t have a problem with meeting bloggers that I follow, so I’d be cool as a homegrown cucumber.

I have made these marshmallows before for a tea party Emma went to a while back, so I knew making them again would be a breeze.  I got out all my necessary ingredients and thought I’ll be smarter than the gelatin this time, so I grabbed my cold water soluble gelatin.  I’m not sure why I thought this would work when you have to heat the honey then add it to the gelatin…that’s what makes the marshmallows.  So, as you can guess, that batch flopped.

After licking my baking wound, I put my big girl panties on and whipped up another batch.  I asked Emma what she wanted me to dust them in, since she didn’t like the toasted coconut last time, and went to work.

I promise making marshmallows is easy; you just need to have a candy thermometer.  It is one of those gadgets that you won’t really use but in a blue moon-like this-so get one.  And honestly, I wanna see you be brave having marshmallows around is kind of fun to eat.  When I made my first batch, I baked some sweet potatoes and melted some over them with a pinch of brown sugar.  Josh didn’t seem to complain too much.

Also, with the first batch I made, I went out on a limb and made a Paleo Fluffernutter Sandwich.  I happen to have this bread recipe freshly made, added some almond butter and then topped it with the marshmallows before they set.  It’s definitely another farfetched recipe but it sure did taste good on the way down!

Then check out Elana’s Pantry for the paleo graham cracker recipe I used.  It might be a good idea to double the batch since mine only really made 6 small crackers in all (after cutting off the excess).

For the chocolate, I used Enjoy Life bars/chocolate chips since they are dairy, soy, & nut free.  You could also use some really dark chocolate, if you like.

Once you have all the components, layer the graham cracker, chocolate, roasted marshmallow, and top with another graham cracker, and enjoy!  They are really good and really rich, so get yourself a nice big glass of water (or dairy-free milk) to wash it down.

Are you a s’mores fan?  Do you have any desire to make your own like I did or have I gone off the deep end?  I know it’s a stretch but they sure were tasty AND could be made at home or in the back yard if you have a little fire pit or chiminea.
